Our Standards

Good soul food starts long before the plate reaches the window. At Big Boy Got It, every dish will be prepared with clean hands, clean equipment, and food handled the way it should be. Proteins are kept cold until they hit the fryer, cooked items are held at safe temperatures, and nothing sits out longer than it should. Our approach to food safety is the same as our approach to cooking: take care of the details, and the customer gets food they can trust.

Mobile food units in Pennsylvania run from a commissary, a licensed base where the truck is cleaned, stocked, and prepped. We plan to use a commissary for sanitation, dry storage, and fresh-water and waste handling, so the truck stays as clean as the kitchen it came from. Stock is stored in sealed, labeled containers, and surfaces are cleaned and sanitized at the start and end of every service. If you have questions about how we handle food safety before the truck launches, call us at (862) 279-5236.

Clean equipment, careful storage, and food served the way it should be.
